Comfort food gets a nutritious upgrade with this Cheesy Veggie Millet Bake! Wholesome cooked millet is layered with bell peppers, mushrooms, broccoli, and sweetcorn, all tossed in a rich, creamy stovetop sauce. Topped with gooey melted mozzarella and black olives, this warm, hearty dish is a satisfying, nutrient-packed meal that feels wonderfully indulgent. Perfect for a cozy weeknight dinner!

INSTRUCTIONS:

Soak the millet for 15-20 minutes and cook it. Heat oil in a pan and add the chopped garlic, bell peppers and saute for a couple of minutes. Add the chopped mushroom and let it cook for 3-4 minutes. Add the broccoli, sweetcorn, vegetable stock, red chilli flakes, pepper and salt. Mix well until combined and cook for 4-5 minutes or until dry. Add the flour and mix well. Pour the milk and mix well until it's creamy. Add the veggie mixture to a glass baking tray followed by the cooked millet. Make layers as shown and top with mozzarella cheese, black olives and red chilli flakes. Bake for 10-12 minutes at 180°C in a preheated oven and serve hot. Enjoy!
