This vibrant mango millet salad combines wholesome barnyard millet with fresh vegetables and a zesty Leche de Tigre-inspired dressing. Blended mango, roasted jalapeño, garlic, ginger and coriander create a bright, flavourful base, while olive oil brings everything together. Finished with crunchy nacho chips, it makes a refreshing and satisfying salad.
INSTRUCTIONS:
Cook the barnyard millet according to the package instructions until tender. Set aside to cool slightly.
To make the mango dressing, add ginger, onion, roasted jalapeño, roasted garlic, coriander stalks and plenty of chopped mango to a blender. Add a little water and blend until smooth.
Transfer the mango mixture to a bowl. Add olive oil and whisk well until combined.
Add bell peppers, cucumber, sweet corn, snow peas and lettuce to the dressing.
Add the cooked barnyard millet to the bowl and toss everything together until well combined.
Transfer the salad to a serving bowl. Top with nacho chips and serve immediately.
