INSTRUCTIONS:
Rinse the millet well and boil it in water until tender and cooked. Drain any excess water and set aside to cool slightly.
Add the chopped red cabbage, green cabbage, carrot, cucumber, baby tomatoes, and smoked tofu to a large bowl.
In a small bowl, combine the olive oil, minced garlic, rice vinegar, and honey. Mix well.
Add the cooked barnyard millet to the bowl with the vegetables and smoked tofu.
Pour the dressing over the salad and toss everything together thoroughly until evenly coated.
Enjoy the salad immediately or refrigerate it for a short while before serving.
